Best Fall Recipe – Vegetarian Pumpkin Coconut Curry Soup

It’s been a while and what better way to kick off a new post with a seasonal treat?

Today I have prepared one of my all-time favorite autumn soups with the wonderful legumes called pumpkin. Now there are many recipes for pumpkin soup you can find online, but I promise you this one will become one of your ultimate favorites!

This recipe I have learned from my mom who absolutely loves Asia anything pretty much – so anytime she comes back from her travels in Asia she adds Asian elements to pretty much all the food she cooks. One recipe I came to love was her twist on a classic pumpkin soup in which she added coconut milk and some curry spices. The flavors are so subtle yet are the soup addictive.

Now enough teasers, let’s get into the recipe!

INGREDIENTS

METHOD

  1. Roast the Pumpkin it in the oven. Drizzled it with olive oil, sprinkled with some salt and bake on a baking tray in a 200° C / 390° F oven for about 40 mins

Meanwhile:

  1. Heat up the pan on medium heat. Once the pan is hot, add peanuts. Wait until they start golden up, stir from time to time.
  2. Peel garlic and ginger, cut it into small pieces
  3. Grind the peanuts

Once the pumpkin is roasted:

  1. Take out the flesh of the pumpkin and put it into the mixer with the garlic and ginger
  2. Put the pureed mixture into a large pot and heat it up with the broth
  3. Now add all the ground spices, some salt and the ground peanuts. Reduce the heat to low. Stir frequently, cook for 1-2 minutes
  4. Add coconut milk. Let it come to a gentle boil, simmer covered for about 10 minutes

Bread Croutons:

  1. Cut baguette into thin slices or small croutons and drizzle a little bit of olive oil over it
  2. Roast bread for 5 min at 220 C°
  3. Add some salt or other spices if needed
  4. Serve with bread leaves and chopped peanuts or cashews on top

Once everything is prepared you can serve the deliciously smooth soup in the pumpkin skin with the roasted bread to impress everyone with cute presentation.
